Making the Tomato Focaccia Cocktail

The Tomato Focaccia Cocktail is a drink that artfully embodies the essence of Italian cuisine. The backbone of this cocktail marries the robustness of classic Italian Amaro and Vermouth with the ripe, tangy essence of San Marzano tomatoes. A savory delight, this cocktail promises to transport your senses to a quaint Italian village with each sip.

THE COMPONENTS

THE TOMARO

A rich blend of Montenegro Amaro and Elena Vermouth di Torino, enriched with the natural sweetness of San Marzano tomatoes, forming the backbone of our cocktail.

INGREDIENTS + METHOD:

  1. Mix 750 mL each of Montenegro Amaro and Elena Vermouth di Torino.

  2. Add 8 peeled San Marzano tomatoes, refrigerate for 24 hours, then strain through a coffee filter-lined chinois.


OLIVE OIL CORDIAL

 A silky mixture of olive oil, nocino, barley malt, water, citric acid, salt, and a balance of gum Arabic, and xanthan gum, to bind the olive oil with the rest of the ingredients. This cordial adds a bready aromatic, a smooth, velvety texture, and a hint of Mediterranean flair.

INGREDIENTS + METHOD:

  1. In a Vitamix, blend 240 g water with 2.7 g gum Arabic and 0.5 g xanthan gum.

  2. Slowly incorporate 100 mL nocino, 60 mL barley malt syrup, 200 mL olive oil, 3 g citric acid, and 5 g salt.

INGREDIENTS + METHOD:

  1. Combine 2 oz of Tomaro with 1 oz Olive Oil Cordial in a shaker.

  2. Add ice, shake vigorously, and strain back into the tin.

  3. Dry shake or hit the mixture with a milk frother to emulsify and serve over a king cube in a rocks glass.

  4. Garnish with a halved dried San Marzano tomato.
