The Samosa Cocktail
This savory creation from our Baker’s Dozen menu is a unique blend of the boldness of Scotch paired with the dynamic spices and depth of Indian cuisine. Creating a drink that offers a distinct flavor profile reminiscent of India's beloved snack, the samosa, in a sophisticated cocktail form.
THE COMPONENTS
GHEE WASHED JOHNNIE WALKER BLACK LABEL
At the heart of the Samosa cocktail lies the ghee-washed blended Scotch. This technique, known as fat-washing, infuses the Scotch with the nutty, buttery flavors of ghee, adding a comforting, unexpected depth to the cocktail.
INGREDIENTS + METHOD:
+ 1L Johnnie Walker Black Label
+ 1.5 oz jar ghee
Warm the ghee until liquified, whisk together with the Scotch in a container, and let rest for four hours. Cover and freeze overnight, then strain to unveil a Scotch that's rich in flavor and smoothness.
CURRY CORDIAL
The curry cordial is a bold embrace of spice, blending the earthy tones of curry with the sweetness of molasses and the depth of dark rum.
INGREDIENTS + METHOD:
+ 1 bottle Plantation Dark Rum
+ 300g molasses
+ 2 tablespoons curry powder
Combine curry powder and dark rum, letting it rest for 30 minutes. Strain through a coffee filter, then add molasses to complete the cordial.
ACID-ADJUSTED MANGO JUICE
Bringing a tart balance to the cocktail.
INGREDIENTS + METHOD:
+ 1L Mango Juice
+ 35g Citric Acid
Whisk or blend until the citric acid is fully dissolved in the mango juice.
BUILDING THE SAMOSA COCKTAIL

INGREDIENTS + METHOD:
+ 1 oz Ghee Washed Johnnie Walker Black Label
+ 0.5 oz Laphroaig
+ 0.75 oz Acid-Adjusted Mango Juice
+ 0.75 oz Curry Cordial
+ 2 oz Jarritos Tamarindo
+ Nitro-muddled mint (or fresh mint for a simpler approach)
Prepare Nitro-Muddled Mint: Begin by adding a small handful of mint to a tin. If you have access to liquid nitrogen, carefully add it to the tin to flash-freeze the mint. Pour off the excess liquid nitrogen and muddle the mint into a fine powder. For a home-friendly version, simply muddle fresh mint leaves vigorously to release their oils.
Mix the Cocktail: In a shaker, combine the ghee-washed Scotch, Laphroaig, acid-adjusted mango juice, ice and shake vigorously.
Combine with Jarritos Tamarindo: Strain the mixture into a Collins glass containing the 2 oz of Jarritos Tamarindo. Add pebble ice to the top, and leave just enough space for the float.
Float the Curry Cordial: Gently float the curry cordial on top of the drink.
Garnish: Complete the cocktail with a bouquet of fresh mint.
